Smart Substitutions

The recipe calls for sour cream. Opening the refrigerator you discovered your teenager used it all up making some dip for chips after school. It's too late to run to the store. What do you do? Has this ever happened to you? Here are some tips...

Recipe calls for: Substitute:

1 square unsweetened chocolate

3 T. unsweetened cocoa powder and 1 T. butter or margarine

1 c. sifted flour

1 c. less 2 T. all-purpose flour

1 c. sour cream, for baking

1 c. plain yogurt

1 cup buttermilk

1 Tbsp. vinegar or lemon juice + enough lowfat milk to make 1 cup - let set for 15 minutes

1 tsp. lemon juice

1/4 tsp. vinegar

1 small garlic clove

1/8 tsp. garlic powder

For thickening: 2 Tbsp. all-purpose

1 Tbsp. cornstarch, potato starch or rice starch OR 2 Tbsp. quick-cooking tapioca

1 cup granulated sugar

1-3/4 cup confectioner's sugar or 1 cup packed light brown sugar

1 Tbsp. prepared mustard

1 tsp. powdered mustard

1 cup honey

1-1/4 cups granulated sugar plus 1/4 cup liquid (whatever liquid the recipe calls for)

1 cup Half-and-Half

1-1/2 Tbsp. butter plus enough whole milk to equal 1 cup or 1/2 cup light cream plus 1/2 cup whole milk

1 cup corn syrup, light or dark

1-1/4 cups granulated or packed brown sugar plus 1/4 cup liquid (use whatever liquid the recipe calls for)

1 cup tomato juice

1/2 cup tomato sauce plus 1/2 cup water
