Fabulous Apple Pie

Apple Pie
  • 7 tart apples, peeled and cored
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1-1/2 tsp. ground cinnamon
  • 4 Tbsp. flour, divided
  • 1/2 tsp. ground nutmeg
  • Salt to taste
  • 2 unbaked pie crusts for 9" deep dish pie pan (homemade or refrigerated store pie crust)
  • 1 Tbsp. butter
  • 1 egg white
Preheat oven to 400°F. Cut apples into thin slices, place in large mixing bowl.
Combine sugars, cinnamon, flour, nutmeg, and salt; mix thoroughly. Sprinkle over the apples and stir until coated.
Use one of the pie crusts to line the bottom of 9" deep dish pie pan. Brush this bottom crust with beaten egg white. Add apple mixture and  dot evenly with butter. Lay second pie crust over the top of the apples, gently pressing down. Cut slits to release steam while cooking. Brush top crust with remaining egg white – sprinkle with white sugar.
Bake pie in preheated oven 50 minutes, or until golden brown. Check after 30 minutes, and if the crust is already browned reduce heat to 350°F.
