Sweet & Sour Shrimp with Apples

In a large skillet, heat one tablespoon of vegetable oil over high heat. Stir fry 1 pound of peeled and deveined shrimp until just pink. Transfer shrimp to a large bowl and set aside. Add another tablespoon of oil to your skillet and stir fry 2 Golden Delicious apples, that have been cored and thinly sliced, for one minute. Transfer to the bowl with the shrimp. Add another tablespoon of oil to the skillet and sauté 1 cup green onion that has been cut into one inch pieces, 1 sweet green or red pepper that has been seeded and cut into strips and 1 1/2 cups of fresh snow peas. Stir fry two minutes. Transfer veggies to the shrimp and apple bowl. In another bowl, combine:

  • 1/2 cup cold water
  • 1/3 cup firmly packed dark brown sugar
  • 1/4 cup rice wine or cider vinegar
  • 4 teaspoons cornstarch
  • 1 tablespoon of soy sauce
  • 1 teaspoon of ground ginger

Mix until well blended, then pour into your skillet and cook, stirring constantly until boiling and thick. Reduce heat to low and return all ingredients to the skillet and heat through. Serve over rice or noodles, if desired. A quick and satisfying dish!
