Pineapple Dream

This dessert is called "Pineapple Dream" or "Pineapple in a cloud". This is so quick and easy to make that it is the perfect dessert to make in a pinch. However, it does take around an hour to an hour and a half to set, so be sure to allow at least that much time.

Begin this dessert with one 8 ounce package of slightly softened cream cheese, one 9 ounce bowl of whipped cream, and 1/4 cup of sugar. (Once again, low fat/reduced calorie versions can be used) Place the cream cheese and sugar into a large bowl and mix with an electric mixer until well blended. Then. either by hand, or very slowly with the electric mixer, fold in the whipped cream. Once the whipped cream is blended with the other two ingredients, stir in a 15 ounce can of very well drained crushed pineapple.

After the pineapple is added, simply pour the mixture into a 9 inch pie pan that contains either your favorite homemade graham cracker crust recipe or a store bought graham cracker crust. Chill for approximately 60 to 90 minutes, then cut and serve. This dessert is wonderful! Especially considering how simple it is to create. It is cool, sweet, and almost exotic in nature with the pineapple. Although I haven't experimented with it yet, I have considered trying a couple other versions of this dessert...following the same technique except substituting something like blueberries or peaches, etc. for the pineapple.

Remember that this contains real cream cheese, and therefore, is not meant to be left sitting out for long periods of time. Trust me, once this desserts is presented to any table, you won"t need to worry about it sitting from that point on... the pan will soon be empty! Enjoy!
