Orange, Carrot & Raisin Loaf

  • Non-stick cooking spray
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/8 tsp. nutmeg
  • 1/8 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 c. applesauce
  • 3/4 c. low-fat buttermilk
  • 1 large egg
  • 2 egg whites (CD0141)
  • 1/2 T. vegetable or canola oil
  • Zest of one orange
  • 1 c. grated carrots
  • 3/4 c. raisins

1. Preheat oven to 350 degrees. Lightly spray all sides of a 10" x 4 1/2" x 3" loaf pan (BP1510) with non-stick cooking spray.

2. In a medium bowl, whisk the flour, baking soda, salt, nutmeg and cinnamon until well-blended. Set aside.

3. In another medium bowl. beat the sugar, applesauce, buttermilk, egg, egg whites, oil and orange zest with an electric mixer for about 2 minutes. Pour the buttermilk mixture into the dry ingredients and stir until barely moistened. Add the carrots and raisins and mix

4. Bake for approximately one hour, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then loosen the loaf. Transfer the loaf onto a wire cooling rack.
