How to Melt Candy or Confectionary Coating

Candy coating is flavored to taste like chocolate without the hassle of tempering - great for beginners and easy to work with! 
Candy Wafers
  • Melt no more than 1-2 cups of coating at a time in a microwave safe container, preferably a glass measuring cup (easier to pour). 
  • Microwave on medium to low heat for 30 sec. bursts. Stir in-between. It won't look like it's melting at first, but the process goes quickly after the 3rd or 4th time. No more than 30 sec. at a time, as the chocolate needs constant stirring to prevent hardening. 
  • Stir the chocolate continuously until it has all melted smoothly. (If it does get hard or chunky, allow to cool and it will reconstitute)
You can use a double boiler, or create your own by using a small bowl and sauce pan. 
  • Rest a small metal or glass bowl on a saucepan with 1 inch of water at the bottom. Make sure the bottom of the bowl is at least 1 inch above the surface of the water - not resting in the water.
  • Bring the water in your saucepan to a SIMMER (do not boil). 
  • Stir the chocolate continuously until it has all melted smoothly. 
Be careful not to get any water into the coating.
Moisture in the coating will cause it to become thick and seize up.
Flavors and Colors
Once the coating is melted and has a smooth consistency, flavors or colors may be added if desired. To flavor, you must use an oil-based flavor. Usually a few drops per batch is enough. To color white chocolate, use only powdered food color or oil-based candy colors. Do not use a water-based gel color as it will cause seizing.
