Lefse

Lefse is a Scandinavian treat, usually enjoyed around Thanksgiving and Christmas.

  • 5 cups riced potatoes
  • 1/2 tsp. sugar
  • 1 stick margarine
  • 1 1/2 cups flour (when ready to roll)

Boil potatoes until soft. Rice potatoes while hot then add butter and 1/2 tsp. sugar. Cool to room temperature. Refrigerate overnight in airtight container.

Mix in 1 1/2 cups flour. Knead a little until dough feels smooth and elastic. Roll thin on pastry cloth and bake on a very hot lefse grill until light brown spots appear. Stack and cover with towel. Fold lefse treat in half then fold in half again. Wrap in plastic wrap and aluminum foil.

The shell is filled with whatever your imagination and taste buds desire. Some of the most popular fillings include butter & brown sugar and fruit fillings.
