Impossibly Easy Pumpkin Pie

This spicy pumpkin pie makes its own crust while baking - a great solution for cooks who struggle with making pie crusts!

Pumpkin Pie


  • 2 cups pumpkin puree
  • 1-1/2 cups milk (use skim or low-fat)
  • 3/4 cup white sugar
  • 1/2 cup biscuit baking mix (or low-fat Bisquick)*
  • 2 Tbsp. butter, melted
  • 2 eggs, beaten
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground allspice
  • 2 tsps. vanilla extract

Note: You can vary the amount of spices to your preference, or use 2-1/2 tsp. pumpkin pie spice.

*(Try making your own biscuit mix with 1 cup flour, 1/4 tsp. salt, 2 tsp. baking powder, 1/8 tsp. baking soda. This mix can also be used for pancakes.)



1. Preheat oven to 350°F/175°C. Grease 9 inch pie pan.

2. In a medium mixing bowl, combine pumpkin, milk, sugar, baking mix, melted butter, eggs, allspice, cinnamon, cloves, and vanilla extract. Beat on medium speed 2 minutes, until mixture is smooth. Pour mixture into pan.

3. Bake in preheated oven for 50 to 55 minutes, until set in center. Allow to cool before serving.

Serve with whipped topping!
