High Humidity Hard Candy

  • 1 cup sugar
  • 1/2 cup Humi-Sweet (IN0540)
  • 2 oz. warm water
  • 1 tsp. Lorann flavoring (FL0210)
  • 1/8 tsp. Citric acid (IN0002) (opt.*)
  • Food color if desired

Combine sugar, water and Humi-Sweet. Bring to boil and cook to 290° F. Cool to 265° F, then add flavor and citric acid. Using funnel, pour into molds (lubricated if necessary). Makes about 1-1/2 pounds.
