Barbecued Beef Short Ribs


  • 4 pounds beef short ribs<
  • 1 tablespoon butter or margarine
  • 1/3 cup chopped onion
  • 1 cup apple cider or juice (cider gives them a tangier flavor)
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon catsup
  • 1 tablespoon plus 1 teaspoon all-purpose flour
  • 1/4 to 1/2 teaspoon dried basil
  • 1/8 teaspoon ground cloves
  • Salt to taste*

Cooking Directions:

Melt butter in a medium saucepan over low heat; add chopped onion, and sauté until onion is lightly browned. Add flour, stirring well. Cook 1 minute, stirring continuously. Gradually add apple cider or apple juice, cook over medium heat, stirring continuously, until mixture thickens. Stir in remaining ingredients except ribs. Remove sauce from heat, and set aside.

*Salt after cooking is complete. Salt flavor is absorbed in cooking, so less is used if you wait until cooking is complete before you use the salt shaker.

Cut ribs into serving size portions, and grill over low coals 1 hour and 15 minutes. If using a gas grill, adjust time accordingly. Baste ribs with sauce, and grill 20 more minutes or until desired degree of doneness. Turn and bast frequently with sauce. Serve the remaining sauce along with the ribs.

Serve the main course with a tossed salad and baked potatoes with individual choice of toppings, such as: chives, sour cream, grated cheddar cheese, bacon bits, etc.
