Banana Foster Cheesecake

Cheesecake is a treat all year long. The addition of rum makes this cheesecake all the more inviting to taste.

Banana Foster Cheesecake


Crust:

  • 3/4 cup all-purpose flour
  • 3/4 cup finely chopped pecans
  • 4 tbsp. unsalted butter
  • 3 tbsp. sugar
  • 2 tbsp. (packed) brown sugar
Filling:
  • 2 - 8 oz. pkgs. cream cheese, softened
  • 1-1/4 cups sugar
  • 2 tbsp. cornstarch
  • 3 lg. eggs
  • 2 cups pureed bananas (about 4 bananas)
  • 1 cup sour cream
  • 1-1/2 tbsp. fresh lemon juice
  • 1 tbsp. dark rum
  • 1/2 tsp. vanilla extract
  • 1/2 tbsp. ground cinnamon
  • pinch of salt
Topping:
  • Sweetened whipped cream or whipped topping
  • 8 oz. caramel sauce
  • 1 tbsp. dark rum
  • Bananas, peeled and sliced
  • Finely chopped pecans (optional)

In a sauce pan over medium heat melt together the chocolate chips, peanut butter and sweetened condensed milk. Stir slowing until fully melted and combined, remove from the heat and stir in the vanilla and chopped nuts. Carefully pour into a buttered 8" x 8" pan and cool in refrigerator. Cut into 1 inch pieces.

Yield: 64 one inch pieces
