Apple Ring Pickles

Prepping Vegetables

  • 2 gallon large cucumbers, peeled with seeds cut out of center (to make rings).
  • 2 cups pickling lime to 8-1/2 quarts water.

Pour solution over cucumbers and let stand for 24 hours.
Drain and wash in clean water.
Soak for 3 hours in cold water, then drain.

  • 1 cup vinegar
  • 1 bottle red food coloring
  • 1 Tbsp.pickle crunch
  • Enough water to cover pickles.
Simmer cucumbers 2 hours in this solution; then drain (throw solution away)

  • 2 cups vinegar
  • 2 cups water
  • 10 cups sugar (remember these are fancy pickles)
  • 1 package of cinnamon red hot candies.
Cook syrup to melt red hots; pour over rings; let stand overnight.

Next day drain off syrup, reheat syrup and pour over rings.
Repeat process for 3 days.
On the 3rd day - drain, heat syrup, pour over rings and seal.
Process for 15 minutes in boiling waterbath.
