Preheat oven to 350 degrees and coat a 12x20x2 inch pan with cooking spray. In a bowl, combine:

• 4-1/2 cups of chopped Granny Smith apples
• 3 cups of diced cucumbers
• 2 cups of diced red onions
• 2/3 cup jalapeno peppers, seeded and minced
• 1/4 cup fresh parsley

In another bowl, combine:

• 10 large eggs which have been beaten
• 2 cups of shredded cheddar cheese
• 2/3 cup lime juice
• 1/2 cup olive oil
• 2 cups of prepared chunky salsa, drained
• 1 teaspoon of salt
• 1/2 teaspoon of pepper

Stir egg mixture into apple mixture. Pour into prepared pan and top with an additional 3 cups of shredded cheddar cheese. Bake 30-35 minutes or until set and cheese is golden brown. Cool 5 minutes before cutting into serving squares.
