Fermentation is a traditional method of conserving food. An effective starter culture, when used correctly, helps to control the fermentation process by providing an ideal environment for the fermentation to start. A starter also stabilizes the process improving consistency and enhancing taste and crispness. Caldwell's Starter Culture is the result of 15 years of research and contains the correct bacteria strains for homemade sauerkraut and other raw cultured vegetables. 2 pouches, each pouch prepares 4-1/2 lbs. of raw vegetables. Comes with complete preparation instructions for sauerkraut.

This item is for 2 of the small Pouches, NOT 2 of the Packs (Boxes) of Caldwell starter culture. Read the smaller description carefully so you know you're NOT getting boxes but just 2 little 2 gram pouches.

Sugar (as a carrier), active lactic bacteria(Lb.plantarum, LN. mesenteroides, Pc. acidilactici).This product is manufactured in a facility that manipulates products that contain wheat, soy, eggs, milk and fish (including shrimps).
Please note: There is an element of dairy in this product as a carrier, but the proportion in the final cultured veggies is absolutely minute, around 17 parts per million, which is below trace level.
