Preserve your cheese by coating in wax to retain moisture while the cheese ages. Melt the wax and brush on chilled cheese or carefully dip your cheese into the wax one side at a time. Two thin coats are preferable to one thick coat. Be sure to fill up any air spaces to prevent mold from growing. Peel when ready to eat. 1 lb. red wax.
