Use spring-loaded cutters to cut out patterns in the top crust, to cut-out designs from rolled dough to lay on top of pie, or just press cutter once to leave an imprint of the pattern on the pastry dough. I make thousands of cookies for community events, so I am always looking for new ideas. In the fall I make maple-flavored shortbread cookies with the leaf cutter. The cookies could also be sandwiched with a little frosting. Gorgeous!
