"I am so disappointed in this Chocoloate. I have used Merckens white chocolate before for making christmas bark and dipped pretzels and have been very happy, but the color on this separated when cooling and looks very mottled. It also doesn't harden as well, and my bark is very soft. I won't use the ivory again!"

"As there are so many variables (i.e. color, bloom, time of year etc.) I usually buy chocolate from a local purveyor so that I know exactly what I am purchasing. However, there have been those occasions that buying five pounds or more of white Merckens has proven the most fitting to my needs. One must keep an up to date skill set when working with all flavors of chocolate as well as spices. Freshness applies not only to produce and protein but to spices down to the final grains of salt."
Ingredients: Sugar, cocoa butter, milk, lecithin, vanillin.
