Scandinavian Almond Cake

 

  • 1-1/4 cup sugar

  • 1 egg

  • 1-1/2 tsp almond extract

  • 2/3 c milk

  • 1-1/4 cup flour

  • 1/2 tsp baking powder

  • 1 stick melted butter

 

Preheat oven to 350 degrees. Lightly grease pan with cooking spray. Sprinkle slivered almonds into bottom of pan if desired.

Combine egg, extract and milk - beat well. Stir in flour and baking powder, then add the melted butter. Beat until well mixed and pour into greased pan. Bake 40 to 50 minutes or till edges are golden brown. Leave cake in pan until completely cooled. Place inverted cake plate on top of cake pan and then flip. Dust with confectionary sugar if desired.
