Orange, Carrot & Raisin Loaf
This recipe was brought to us by Dennis Lockard.
- Non-stick cooking spray
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/8 tsp. nutmeg
- 1/8 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. sugar
- 1 c. applesauce
- 3/4 c. low-fat buttermilk
- 1 large egg
- 2 egg whites (CD0141)
- 1/2 T. vegetable or canola oil
- Zest of one orange
- 1 c. grated carrots
- 3/4 c. raisins
1. Preheat oven to 350 degrees. Lightly spray
all sides of a 10" x 4 1/2" x 3" loaf pan (BP1510)
with non-stick cooking spray.
2. In a medium bowl, whisk the flour, baking soda, salt, nutmeg and cinnamon until well-blended. Set aside.
3. In another medium bowl. beat the sugar, applesauce, buttermilk, egg, egg whites, oil and orange zest with an electric mixer for about 2 minutes. Pour the buttermilk mixture into the dry ingredients and stir
until barely moistened. Add the carrots and raisins and mix
4. Bake for approximately one hour, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then loosen the loaf. Transfer the loaf onto a wire cooling rack.
