Beautiful, realistic edible “diamonds” to use on cakes and special pastries. You could even turn one of the “diamonds” into an engagement ring by piping a icing around to look like a gold band. Sugar diamonds may be affected by humidity creating a cloudy or misty appearance. If this occurs, spray them with a light coating of an oil based baking spray to help restore their shine.
