Beautiful to
serve on a relish tray with a sweet hot cinnamon
flavor.
2 gallon large cucumbers, peeled with
seeds cut out of center (to make rings).
2 cups lime to 8-1/2 quarts water.
Pour solution over cucumbers and let
stand for 24 hours.
Drain and wash in clean water.
Soak for 3 hours in cold water, then
drain.
Heat
1 cup vinegar
1 bottle red food coloring
1 Tbsp. pickle crisp
Enough water to cover pickles.
Simmer cucumbers 2 hours in this
solution; then drain (throw solution away)
Syrup:
2 cups vinegar
2 cups water
10 cups. sugar (remember these are
fancy pickles)
1 package of cinnamon red hot
candies.
Cook syrup to melt red hots; pour
over rings; let stand overnight. Next day drain off syrup, reheat syrup and pour
over rings. Repeat process for 3 days. On the 3rd day - drain, heat syrup, pour
over rings and seal. Process for 15 minutes in boiling waterbath.
