High Humidity Hard Candy

1 cup sugar
1/2 cup Humi-Sweet (IN0540)
2 oz. warm water
1 tsp. Lorann flavoring (FL0210)
1/8 tsp. Citric acid (IN0002) (opt.*)
Food color if desired

Combine sugar, water and Humi-Sweet. Bring to boil and cook to 290° F. Cool to 265° F, then add flavor and citric acid. Using funnel, pour into molds (lubricated if necessary). Makes about 1-1/2 pounds.

*Citric acid enhances fruit flavors

Note: 1 tsp. = 1 dram
