Helps to prevent scorching, burning, hot spots and water from boiling over. It provides more precise temperature control for delicate sauces. Every Kitchen should have a Heat Diffuser. Hands Down it is a necessity for using any pan and cooking almost anything. I use my very very old diffuser whenever I make any kind of soup/stew. Helps to keep the contents from boiling over. My Granny bought all the Granddaughters one back in the 80's as she saw the value and the use. Especially good to use for making jams and jellies.
